Carmel Apples



1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 14oz can sweetened condensed milk
2 tsp vanilla
1/2 tsp salt

In a heavy pan combine butter, sugar, syrup,  and milk over medium heat;  bring it to a boil.  Continue to cook  and stir until it reaches 248 degrees (firm ball) - about 30-40 min.  Remove from heat and add vanilla and salt.  Let it cool a couple minutes before dipping apples.  One batch does about 8-10 apples.

Coconut Tres Leches Hot Chocolate

Ingredients

3 cups milk
1 14 ounce can coconut milk
1/2 of a 14 ounce can sweetened condensed milk
2 tablespoons of unsweetened cocoa powder
1/2 teaspoon vanilla
chocolate shavings (optional)
whipped cream

Directions

Mix together the first six ingredients. Heat on stove top or in crock-pot. If using a crock-pot heat on low just until warmed through and then turn to warm or off. Add chocolate shavings and whipped cream when serving.

Prime Rib

Ingredients
1 8-10 lb prime rib roast (bone-in)
2-4 tsp of minced garlic
2 T olive oil
2 tsp salt
2 tsp ground black pepper
2 tsp dried thyme

Directions:
1. Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper and thyme. Spread the mixture over the fatty layer of the roast and let the roast sit out until it is at room temperature (no longer than 1 hour).

2. Preheat the oven to 500 degrees

3. Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees and continue roasting for until meat reaches 145 degrees (medium rare). Approximately 2 1/2 more hours

4. Allow the roast to rest for 10 to 15 min before carving so the meat can retain its juices.

Candy Cane Bread

Ingredients:

2 cups dairy sour cream
2 pkgs. dry yeast
1/2 cup warm water
1/4 cup butter, softened
1/3 cup sugar
2 tsp. salt
2 eggs
About 6 cups flour
1 ½ cups finely chopped dried apricots
1 ½ cups finely chopped maraschino cherries

Soft butter or margarine


Thin Icing: 2 cups powdered sugar mixed with 2 Tbls. water, ½ tsp. vanilla.

Directions:

Heat sour cream over low heat just until lukewarm. In large bowl, dissolve yeast in warm water. Stir in sour cream, 1/4 cups butter, sugar, salt, eggs and 2 cups flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. Knead until smooth, about 10 min. Place in greased bowl; turn greased side up. Cover and let rise in warm place until double, about 1 hour.

Heat oven to 375ยบ. Punch down dough, divide into 3 equal parts. Roll each part into 15x6-inch rectangle; place on greased baking sheet. With scissors, make 2" cuts at ½" intervals on long sides of rectangles. Combine apricots and cherries; spread 1/3 of mixture down center of each rectangle. Crisscross strips over filling. Stretch dough to 22"; curve to form cane. Bake 15-20 min., or until golden brown; brush with butter; drizzle with Thin Icing. Decorate with cherry halves or pieces to resemble holly.

Chocolate Cream Pie Filling

Ingredients
1 Cup sugar
1/4 Cup cornstarch
1/4 teaspoon salt
1 1/2 Cups milk
3 eggs
2 oz semi sweet chocolate
2 Tablespoons butter
1 teaspoon vanilla extract

Directions
In medium saucepan mix sugar, cornstarch and salt. Stir in milk. Add eggs and chocolate and cook over low until thick and smooth beating all the time. Remove and stir in vanilla and butter. Pour into baked 8 inch pie shell and serve with whip cream.

Fabulous crescent rolls

Ingredients
1 Tablespoon yeast
1/4 Cup water
1 Cup milk
1/4 Cup sugar
1/2 - 1 teaspoon salt ( use less salt if using all butter) Butter is for richness, shortening is for fluff. That is why we divide it.
3/4 Cup butter or shortening ( we use half and half)
2 eggs
4 Cups flour

Directions
Dissolve yeast in water. Melt shortening in milk with sugar and salt by heating in mivrowave. don't get your milk too hot. Make sure it is cooled before adding to yeast. Add eggs and flour. It may take a little more flour but it is a very soft dough. You can stick your finger in it and it is ready when it doesn't stick to your finger. Because there is so much shortening in the dough it is less sticky. Cover in bowl and let rise until double. Divide into four parts. Roll each part into a circle about 12-14 inches in diameter. Spread with butter and cut into 8 wedges. Roll each up and place on baking sheet. Let rise again about 1 and 1/2 hours. Bake at 400 degrees F for about 10 minutes.

Spicy Cherry Sauce

Ingredients
3/4 Cup sugar
dash of salt
2 Tablespoons cornstarch
3/4 Cup orange juice
1 Tablespoon lemon juice
2 Cups tart red cherries (not drained)
1 inch stick of cinnamon
1/2 teaspoons whole cloves
1/4 teaspoon red food coloring

Directions
Combine sugar, salt, and cornstarch. Stir in orange and lemon juices. Add cherries, spices and food coloring. Cook, stirring constantly, over medium heat until thickens and comes to boil. Boil for 2 minutes. Before serving remove cinnamon and cloves. Serve warm with ham.
