Cannelloni with Cheese Sauce

Ingredients
2 tbls. butter
1 tbl. chopped green onion
1 10-oz. pkg. frozen, chopped spinach,cooked and drained
1 cup finely chopped cooked chicken
½ cup finely chopped ham or mushrooms
½ cup grated Parmesan cheese
1 egg, beaten
¼ tsp. ginger
¼ tsp. salt

Directions
Cook onion in butter until tender. Stir in spinach, chicken, mushrooms, cheese, egg, ginger and salt. Cook until heated. To assemble: Cook approximately 24 4" squares of pasta and drain. Spread rounded tablespoon of meat mixture down center of warm pasta square; roll up jelly-roll fashion. Place seam-side down in greased 9x13" dish. Pour cheese sauce evenly over; sprinkle with chopped parsley. Bake 20 min., 350ยบ. Broil 5 min.

Cheese sauce: Melt ¼ cup butter; add ¼ cup flour; stir until well blended. Gradually stir in 1½ cups half-n-half, 1½ cups water, 2 chicken bouillon cubes. Cook, stirring constantly, until thick; stir in ½ cup grated Parmesan cheese and heat just until melted.
