Manicotti

Ingredients
Cheese Filling:
½ # mozzarella cheese, shredded
2 # ricotta cheese
½ cup grated Parmesan cheese
2 eggs
1 tbl. chopped parsley
1 tsp. Italian seasoning (optional)
1 tsp. salt
¼ tsp. pepper

Directions
Combine all ingredients until well blended. To assemble: Spoon or use pastry bag to fill commercial shell or tube or place filling down center of cooked pasta square (at an angle) and roll up. Place seam side down in 9x13 pan. Cover with favorite tomato sauce and bake, covered, 30 min., 350º. Uncover and sprinkle with 1 cup shredded mozzarella cheese, bake 5 min. longer.
