Ingredients
2 cups corn or peanut oil, for deep frying
1 1/2 pounds fresh string beans, well rinsed, ends trimmed
4 to 6 dried hot chiles to taste
1/4 pound ground pork
I tablespoon dark soy sauce
1 tablespoon rice wine
1 tablespoon red wine vinegar
1/2 teaspoon salt
1 1/2 teaspoons sugar
Directions
1. Set a large strainer over a metal mixing bowl. Have all of the ingredients ready to use and near the cooking area.
2. Heat a wok over high heat until very hot. Add the oil, and when very hot but not smoking, turn off the heat. Add the beans, turn the heat to high, and cook, stirring constantly, until the beans are slightly wrinkled, 3 to 5 minutes. Remove the wok from the heat. Pour the beans into the strainer, allowing the oil to drain into the bowl. Reserve the used oil.
3. Return the wok to medium heat. Add 2 tablespoons of the reserved oil and the chiles. Stir fry over medium heat until the peppers turn dark brown, 5 to 7 minutes. Turn the heat to high, add the ground pork, and stir fry until the pork browns, about 3 minutes. Stir in the soy sauce, rice wine, vinegar, and salt. Add the sugar and beans, stir to combine, and serve.
