Chocolate Orange Thumbprint Cookies

Ingredients:

Cookies
¾ cup sugar
¼ cup unsweetened cocoa
½ cup butter or margarine, softened
tsps. grated orange peel
½ cup shortening
½ tsps. baking powder
1 tsp. vanilla
3 tbls. sugar
1 egg
½ cup orange marmalade
2 ¼ cups flour

Glaze
¼ cup semi-sweet chocolate chips
2 tbls. butter or shortening

Directions:

Heat oven to 325º. In large bowl, beat 3/4 cup sugar, 1/2 cup butter and shortening until light and fluffy. Add vanilla and egg; blend well. Lightly spoon flour into measuring cup; level off. Add flour, cocoa, orange peel, and baking powder; mix well. Shape dough into 1-inch balls; roll in 3 Tbls. sugar. Place 2" apart on ungreased cookie sheets. With thumb, make indentation in center of each cookie. Bake 325º for 14-17 minutes or until firm to the touch. Immediately remove from cookie sheets. Cool completely. Fill each indentation with 1/2 teaspoon marmalade.

In small saucepan over low heat, melt chocolate chips and 2 tablespoons butter, stirring until smooth.* Drizzle 1/4 teaspoon glaze over each cookie. 4 dozen.

TIP: *Chocolate chips and butter can be combined in small resealable plastic freezer bag. Seal bag and place in bowl of hot water until chocolate chips and butter are melted. Squeeze bag with fingers to blend. With scissors, snip off corner of bag to make very small hole for pipping. Pipe glaze over cookies.
