Ingredients
1 lb Italian Sausage removed from casings
1 onion, chopped
2 cloves of garlic minced
5-8 Cups water
beef bouillon
1 can diced tomatoes
1 green pepper chopped
3-4 carrots chopped
1 teaspoon oregano
1 teaspoon basil
2 zucchinis sliced
1/2 lb tortellini
1/2 Cup red wine or 1/4 Cup red wine vinegar
Directions
Brown Sausage and add onion and garlic. Continue to cook. Add water and bouillon, tomatoes, green pepper, carrots and spices. Cook 30-45 minutes. Add zucchini and tortellini and cook 15 more minutes.
I cook tortellini separately and add to each individual bowl to prevent it from being soggy for leftovers.
