Bee Hoon

(Singapore fried noodles)
Yield: 4 Servings

Ingredients
6 Oz Angel Hair Pasta
½ Tsp Salt

2 Chicken Breasts
3 Tbls Peanut Oil
¼ Tsp Salt
¼ Tsp Msg
¼ Tsp Coarse Black Pepper
1 Tsp Liquid Smoke

¼ Tsp Garlic, Crushed
1 Tbls Shallot, Diced
1 Red Jalapenos, Diced
1 Tbls Sesame Oil
1 Tsp Chile Sauce
⅛ Tsp Chinese Five Spice
3 Tbls Soy Sauce
1 Tbls Tomato Paste
2 Tbls Brown Sugar
1 Tsp Chile Oil
1 Tbls Rice Vinegar

Directions
  • Cook pasta in water with salt, drain, keep in cold water until needed.
  • Cook chicken breasts in microwave until just firm enough to dice. Cut breasts into 1/2 inch cubes and saute in peanut oil. Add salt, pepper, MSG, and liquid smoke. Cook until firm and lightly browned. Remove chicken and drain on paper towels and set aside until needed.
  • Add shallots, garlic, jalapeños and sesame oil. Saute until shallots are translucent. Add chile sauce, five spice, and 1/3 of soy sauce. Cook for 2 minutes, remove from heat and then add remainder of soy sauce, tomato paste, sugar, chile oil, and rice vinegar. Mix well. Drain noodles well and add. Fry until kind of dry and noodles brown just a bit. Add chicken and fry long enough to heat chicken.
