Jelly Roll Cake Filling

Ingredients:

1 tsp. unflavored gelatin
2 tbls. cold water
3-4 tbls. powdered sugar
1 cup whipping cream
Flavoring (1 tbl. cocoa, orange marmalade, vanilla, almond extract, nuts, mint, etc…)

Directions:

Sprinkle gelatin into cold water in small sauce pan; let stand one minute. Cook over low heat, stirring until dissolved. Beat whipping cream at low, gradually adding dissolved gelatin. Increase speed and beat until thickened; add powdered sugar and beat until soft peaks form. Stir in flavoring.
